Kolache Recipe


Dough Ingredients
  • 1/2 package fresh Bakers yeast Or two packages of packaged yeast
    • Dissolved according to maker’s directions
  • 1 cup lukewarm water
  • 1/2 cup butter
  • 1 cup milk (scald and cool to lukewarm)
  • 2/3 cup sugar
  • 1 1/2 teaspoons salt
  • 2 eggs well beaten
  • 1/8 teaspoon grated nutmeg
  • 7 cups (or more) sifted flour
  • 1/2 lemon, grated rind and juice (optional)

How to make a Kolache


  1. Cream together butter, sugar and salt.
  2. Add eggs, lemon and nutmeg. 
  3. Mix yeast with water, add milk and blend this liquid with 3 cups of the  flour.
  4. Beat smooth, then add butter mixture and enough flour to make a medium soft dough. (As stiff as can be mixed with a spoon.)
  5. Knead with a wooden spoon.
  6. Let dough rise in a warm place until doubled.
  7. Turn dough out on board and knead down.
  8. Let rise again for a few minutes. It will be easier to handle.
  9. Then make into rolls.
  10. Pinch, or cut off with a spoon, a piece of dough the size of a large walnut, smooth it round and lay rolls two inches apart on a buttered cookie sheet.
  11. Let rise until doubled, then with fingertips stretch, do not mash, roll into the shape of a tiny pie shell.
  12. Fill with fruit filling.
  13. Brush the dough edge with butter and let rise again until the dough is light (about 15 minutes).
  14. Bake for about 20 minutes at 375 degrees.

Fillings for Kolaches


Prune Filling
  • Ingredients
    • Sugar
    • 1 lbs Prune
    • 1/8 tsb cloves
    • 1/2 lemon rind
    • Splash of vanila
  • Instructions
  1. cook prunes until very tender
  2. Remove seeds
  3. add sugar and vanila to taste, cloves, and grated lemon rind
  4. cook down until thick
Apricot Filling
  • Ingredients
    • Sugar
    • 1 lbs Dried apricots
  • Instructions
  1. cook apricots until very tender
  2. add sugar to taste
  3. cook down until thick
Cottage Cheese Filling
  • Ingredients
    • 4 cups of well drained cottage cheese
    • 3/4 cup of sugar
    • 2 eggs
    • 1/2 tsp Vanilla
    • 1/2 tsp salt
    • heavy cream
  • Instructions
  1. Mix all ingredients together well
  2. add enough heavy cream to make a thick jam
Coconut Filling
  • Ingredients
    • 1/2 cup brown sugar
    • 1/2 cup coconut cream
    • 3 Tbsp. butter
  • Instructions
  1. Melt butter
  2. add in all ingredients and mix well
    • After baking top with Iceing and sprinkle with coconut
Poppy Seed Filling
  • Ingredients
    • 1 cup ground poppy seed
    • 1/4 cup butter
    • 1/4 cup milk
    • 1 1/2 tsp lemon juice or 1/2 tsp vanilla
    • 1/4 tsp cinnamon
    • 1/2 cup sugar
  • Instructions
  1. melt butter
  2. mix in all ingredients and let simmer on low heat for 5 minutes
  3. let cool before filling
Fruit Filling
  • Ingredients
    • 2 cups chopped apples
    • 1 cup raisins
    • 1/2 cup water
    • 1 cup brown sugar packed
    • 1/2 tsp salt
    • 1/2 tsp cinnamon
  • Instructions
  1. Mix all ingredients together and bring to a boil
  2. Let boil for about 15 minutes or until thick
  3. let cool before filling
Apple Filling
  • Ingredients
    • 2 cups chopped apples
    • 1 cup brown sugar packed
    • 1/2 tsp salt
    • 1 tsp cinnamon
    • 2 Tbsp Butter
  • Instructions
  1. Cook down the apples in butter and sugar until thick
  2. add in salt and cinnamon
  3. Mix well

Toppings for Kolaches


Posipka
  • Ingredients
    • 1/2 cup sugar
    • 1/4 cup flour
    • 1/3 cup melted butter
    • 1 tsp vanilla
  • Instructions
  1. Mix together until crumbly
  2. Sprinkle on top of Kolache before baking
Simple Icing
  • Ingredients
    • 1/2 lb powered sugar
    • 1 tsp vanilla
    • 1 can Sweet cream
      • enough to make icing thin
  • Instructions
  1. Mix all ingredients together
  2. top after kolache has cooled
